velvety potato purée with bacon and herbs

• Coq au Vin / You know what it is
red wine-braised chicken, with carrots, 
mushrooms, pearl onions, garlic, served over rice

• Pain Perdu à La Mode / Bread Pudding
day-old bread, cream, and eggs baked with fruit and spices, served with rum sauce and Ultimate’s vanilla bean ice cream
